We spend a lot of time beating ourselves up over not being the perfect Mom, wife, daughter, friend, worker, boss, whatever. You name it, we beat ourselves up over it. So, let's just say that sometimes we make things hard on ourselves. Well, when you're having one of those days and you just need to have a quick dinner (that maybe wasn't even on your meal plan for the week), drink some wine, and settle down, then this is the dinner for you. PESTO PASTA SALAD. It's easy, gorgeous, and looks like you invested a lot of time - but you won't. Literally, if you can boil water, you can make this dish in about 15 minutes or less. I make it for potlucks. No one else will bring this dish and it is sure to impress - unfortunately, work potlucks don't generally allow you to enjoy it with a nice glass of Malbec.
RECIPE
* 1 box carb smart type penne, cooked per box instructions to al dente
* 1 tub of prepared pesto (I like Buitoni in 7 oz tub)
* 1-2 cups cherry tomatoes, sliced in half
Makes 4-5 1 cup servings
Cook pasta. Drain, and while hot, add the pesto and stir until all noodles are covered. Add tomatoes.
WHAT?! It's that easy. Yup. You're welcome. Now kick back, enjoy that glass of wine and whatever show it is you're streaming. Plus, your kids will like it (maybe - mine did and that's saying something). And, you can eat lunch from it too for a couple of days.
