Chocolate Oatmeal No Bake Cookies

Do you love chocolate? Make it healthy by adding peanut butter and oats. Just kidding, these have a load of sugar and butter in them, but they are absolutely DELICIOUS. If you need a cookie fix in a hurry, these are for you. This is important - if it's super humid out, these cookies are sensitive. I know that sounds weird, but they may not set up as well on a rainy day. It doesn't mean they don't taste good, they may just not set well and so you can eat them from the bowl. RECIPE

2 cups sugar

1 stick butter, unsalted

1/3 cup cocoa

1/2 cup milk


2/3 cup creamy peanut butter

2 1/2 cups oats

2 tsp vanilla


Measure peanut butter and 2 cups oats into a bowl and set aside.


Place sugar, butter, cocoa and milk in a medium-sized sauce pan on medium heat. Stir continuously until it reaches a rolling boil, and allow to boil for one minute.

Add boiling chocolate goo to the oat and peanut butter bowl and stir until well incorporated. Continue adding remainder of oats until the consistency that is right for you is reached. I usually find about 2.5 cups does the job. Add vanilla and stir until well incorporated.


Spoon heaping tablespoons onto a cookie sheet lined with wax paper and allow to set. I usually eat at least two right away while they're still warm.


Once cookies have set, put in an airtight container, with layers of wax paper between layers of cookies. You can refrigerate them or leave them on the counter in an airtight container. ENJOY!
