Banana Oat Pancakes

So a lot of meals at our house end up in negotiation to get Charlie to eat anything aside from pizza, chicken nuggets, and french fries. He's smarter than me, because he literally just got away with eating macaroni and cheese and two carrots as "health food." Banana oat pancakes are not one of those things that require us to ask him to eat or threaten him with no Blaze and the Monster Machines that day to eat. He loves them and declares "bwanana pancake day" a good one. Best part is that the chocolate chips add just enough sweetness that no syrup is needed and no toddler sugar high will follow.

RECIPE

2 ripe bananas

4 TBSP quick cooking oats

2 eggs

2 TBSP chocolate chips


Makes 6, 1/4 cup batter pancakes


Mash bananas in a sturdy bowl with a fork. Add oats and egg and stir.


Spray nonstick skillet with cooking spray. Heat on medium until warm and add 3 pancakes (1/4 cup each) to the skillet. Sprinkle 1 TBSP of chocolate chips across the 3 pancakes. Cook until bottom is solid (time will vary depending on your heat). To test whether ready to flip, work your silicone spatula under each pancake. When it slides freely, it's ready to flip. These are not normal pancakes, so they may come apart. Don't let that stress you out.

Cook approximately 1 minute on the other side until lightly browned. Remove pancakes onto a plate and repeat with the second batch.


You can double this recipe for a hungry crew. My 3 year old will eat 2 pancakes and my 1 year old will eat 1. An average adult will eat 3 as a serving.



Are these the most beautiful thing you will ever cook. No, they're flat out ugly. But, they are delicious and moderately healthy, so take a win where you can get one.
